Oh...so delicious. This is a picture of a turtle cheesecake I made for my family reunion tomorrow. I love baking things, but don't bake much because most things that would be baked are so unhealthy. So when it comes to times of gathering I make this sort of thing cause I know that way I can have a piece and not the whole thing. I made this last year for the family reunion using all of the full fat products, cream cheese, sour cream, caramels, heavy cream, dark chocolate. The crust is the basic graham cracker, sugar, butter combination. I thought I'd make a healthier one at Christmas time; using half of the cream cheese 1/3 fat plus half non fat (never use all non fat dairy--too watery), low fat sour cream, non fat caramel topping, and then regular dark chocolate (dark chocolate in moderation provides healthy antioxidants). Well, the cake it's self was good, the only problem was the non-fat caramel topping did not solidify and left a caramel puddle in my fridge....and I mean every bit slide off. However, it would be fine if you applied the topping at serving time. For this cake I used half full fat cream cheese, 1/4 non-fat, and 1/4 low fat, full fat sour cream, and made the caramel sauce myself--with melted caramels in cream. As of right now it's sitting happily in the refrigerator. We'll see how it taste tomorrow. I don't think they'll be any complaints. Yummy. Now I must go workout in anticipation of eating a slice, and well....all the other tasty food I will be indulging in tomorrow.
