Pumpkin Pie
Who likes pumpkin pie? My hand is raised. Yep, pretty tasty. Pumpkin pie is actually one of the healthier pie options on Thanksgiving. It's typically lower in calories, and pumpkin is high is vitamin A and fiber, among other things. If you know me (and my healthy eating dad) you know I couldn't stop at the regular recipe. So I used fat free evaporated milk in the filling, and made a whole wheat crust with smart balance instead of butter. Does it taste the same? Yeah...pretty much.
